It’s simple really. You can cook beans with very little effort and only a few ingredients.
If you like your beans freshly cooked or canned in water, prepare them freshly. Boil beans over high heat until they are just tender. Drain and place in a large bowl with cold water. Add salt if necessary. Refrigerate until they are cool.
Canned beans will keep for two or three days in the refrigerator and a month in the freezer.
How to Cook Beans
An old Italian trick for home cooking beans is to soak them in cold water for one hour before cooking them. Drain and dry beans well. Heat canola oil in a deep pot or sauté pan. Add beans and cook them gently for about five minutes or until soft. Add onion, garlic, dried basil and cooked beans.
How to Cook Corn
Depending on the type of corn, you may have to cook it for much longer. For small ears, boil or boil until corn is easily pierced with a fork. Let cool completely. Remove and chop corn from ear and toss in a shallow bowl with a little olive oil, salt and pepper. Sprinkle on freshly chopped parsley or onions. Use corn pasta if desired.
How to Cook Potatoes
How to cook a small potato is a little different than how to cook larger potatoes. Since small potatoes are so soft, you will have to cook it in a pot for less than five minutes or you will lose all of the potato’s vitamins and nutrients.
Preheat oven to 375. Slice thin and place them in a large bowl. Add butter, onion, garlic, salt, pepper and mix well. Place in a greased baking pan and bake for fifteen minutes. If you have corn or beans for a meal, make corn and beans after potatoes for a flavorful and healthy meal.
